large memcached instances on 64bit OS?

Would appreciate hearing about experiences with large memcached instances on
64bit operating systems. What OS did you use? How big were the largest
memcached instances? Given 16GB of usable RAM would you create a since 16GB
instance? 4 x 4GB instances? And so on. I'm aiming to keep as much of our
hot data in RAM with as little physical vertical rackspace as possible.
Please fess up with your crowning glories in this regard :)
