I think there's a sample config somewhere in the distribution for basic configurations, no?

For us we use djabberd because it was easy to integrate with the LDAP server (so everyone can see everyone and we have our regular authentication etc).   It's probably changed a bunch since, but we started with a variation of the sixatalk example: http://code.sixapart.com/trac/djabberd/browser/trunk/examples/sixatalk
