We have 8 servers configured for 64MB each, but we never get above 40MB 
on one server because we don't need any more.  Are you sure that you are 
getting misses due to memory limits?  Are you letting memcached use the 
LRU or do you have it set to not bump old stuff off?  Are you timeouts 
very short?

What client are you using?
